Zucchini and Carrot Soup





Ingredients
1.    2 Cup Chopped Zucchini 
2.    1 Cup Chopped Carrot
3.    3 Garlic Cloves
4.   1tsp Chopped Ginger
5.    1/8 Cup Chopped cilantro
6.    Few leaves of Basil
7.    Salt and Black Pepper according to taste
8.    2 Tsp lemon Juice

Method
Add Zucchini, carrot, garlic, ginger, salt in a pan and cook for 15-20mins. Put in blender cooked vegetables, cilantro, basil and make a puree. Serve hot with black pepper and drizzle of lemon juice on the top……

Zucchini has significant amount of vitamins B6 , Riboflavin, C, K and minerals (potassium and Magnesium). It contain zero fat and is high in water and fiber.

Carrot contain vitamin A , antioxidants, other vitamins and fibers.
